Mediterranean Turkey Burgers with Homemade Tzatziki

Description

Look no further for tonight’s dinner inspiration!  These delicious, packed with flavor, go-ahead-and-make-double, Mediterranean Turkey Burgers will no doubt be on your weekly meal rotation.  Top them with homemade tzatziki and everyone will be asking for seconds!


Ingredients

1 lb ground turkey- 93% lean (NOT ground turkey breast)

1 1/2 cups fresh spinach- chopped small

1/4 small red onion- diced

1/2 cup feta (or more if desired)

1 tsp dried oregano

1 tsp onion powder

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp pepper

1/2 cup Homemade Tzatziki Sauce


Instructions

1. Mix ground turkey and spices until evenly distributed.

2. Finely chop spinach and red onion.

3. Add spinach, red onion and feta to turkey and spices.

4. Form into patties.  I like to weigh mine out to 1/4 pound to help with even cooking time.

5. Cook on a grill pan, grill or cast iron skillet for 5-6 minutes per side.  (If using a skillet, melt a Tbsp butter in the skillet to prevent sticking.)

6. Serve hot with Homemade Tzatziki Sauce (see link for recipe).  Enoy!!

Notes

If following the SCD diet, prepare the tzatziki sauce using 24-hour fermented yogurt and serve naked or with lettuce or cabbage buns.

Store leftovers in the refrigerator for 3-4 days.
