Warning: This creamy, chocolatey dessert is so satisfying and addictive, you won’t want to stop eating it! This Dairy Free Chocolate Date Ice Cream rivals any traditional chocolate ice cream you will find in the store. Critics agree that it actually tastes better and since there is NO SUGAR, only dates to sweeten it, it is much better for you too!
Ingredients
1 cup unsweetened almond milk- no added ingredients (try brands like Elmhurst or Califia Farms)
1/2 cup unsweetened coconut milk- no added ingredients (try brands like Trader Joe’s or Thai Kitchen 2 Simple Ingredients)
1 Tbsp unsweetened cashew or sunflower butter
4 large medjool dates (pitted)
3 Tbsp cocoa powder
1/2 tsp vanilla
1/8 tsp salt
1/8 tsp cinnamon
Instructions
1. Blend all ingredients in a high speed blender until completely smooth.
2. Freeze for 6-8 hours. If using a Ninja Creami, freeze in the appropriate pint size container for at least 6-8 hours (or overnight).
3. Blend in the Ninja Creami for ultimate smooth creaminess. (You may need to use the re-spin option if it is not smooth after the first blend.) If not using a Ninja Creami, when you are ready to eat, just set the ice cream on the counter for a few minutes and allow it to thaw a little.
Notes
Any type of non-dairy milk will work with this recipe. I have had success with all almond milk, all coconut milk and the combination that you see in the recipe. I imagine cashew milk or macadamia nut milk would also be delicious options!
