Tangy Carrot and Ginger Dip

Description

Bursting with ginger, lime and honey, this dip is as exciting as it is colorful!  It is perfect for salads or as a veggie dip.


Ingredients

Scale

2/3 HEAPING cup chopped carrots

2 Tbsp fresh ginger

2 Tbsp fresh lime juice

1 Tbsp + 1 tsp honey

1/41/3 cup apple cider vinegar (see notes)

1/41/3 cup olive oil (see notes)

1/4 tsp salt


Instructions

  1. Place all ingredients into a high-speed blender and process until smooth and creamy.

Notes

If serving as a veggie dip, use the lesser amount of apple cider vinegar and olive oil.  This will result in a thicker dip.  This is the way I prepare this dip every time.  I even like this thicker consistency on salads.

If serving as a dressing, you can use the greater amount of apple cider vinegar and olive oil to produce a thinner, more dressing like consistency.
