Sweet and Spiced Crock Pot Shredded Pork

Description

Ten minutes of prep, just a few ingredients and a crock pot are all you need for this super flavorful shredded pork!  This dish is so versatile and customizable- great for leftovers and one everyone in the family will love.


Ingredients

2 lbs pork loin or tenderloin

1 tsp salt- or more to taste

1/2 tsp pepper

1 tsp cumin

1 tsp cinnamon

1 tsp chili powder

1/2 cup homemade bone broth or water

1/4 cup honey

1 Tbsp coconut aminos OR 1 extra Tbsp honey

2 Tbsp garlic- minced

1/21 Tbsp Tabasco sauce


Instructions

  1. Make the spice rub by mixing the salt, pepper, cumin, cinnamon and chili powder in a small bowl.
  2. Coat the pork loins with the spice rub.
  3. Heat 1-2 Tbps olive oil in a cast iron or stainless-steel skillet.
  4. Sear the pork for a minute or two on each side.  Place seared pork into the crock pot.
  5. Pour the bone broth or water onto the hot skillet to deglaze, scraping all those yummy bits off of the bottom of a pan.
  6. Add broth and browned bits to the crock pot.
  7. Add minced garlic, honey, coconut aminos (if using) and Tabasco sauce.
  8. Cook on high for 2-3 hours or low for 4-6 hours.  After a couple hours, I shred the pork and return to the pot to finish cooking and soaking up all that yummy flavor.

Serving Suggestions:

Make tacos and top with pickled red onion and feta cheese.

Shredded pork salad with Mango Salsa

BBQ style topped with Dijon mustard and spicy pickles alongside creamy coleslaw.

Notes

I usually use 1/2 Tbsp Tabasco sauce but feel free to kick up the heat and add up to 1 Tbsp.
