5 Minute Mango Salsa

Mangos are in season here in Florida! This is exciting news because we love mangos. And we especially love this 5 Minute Mango Salsa. The tomatoes and mangos give it an irresistable sweetness; the lime juice offers that tangy tartness; red onion gives just the right amount of crunch. This salsa can also be made a little spicy, if you wish, by adding a little jalapeño. Either way, you are sure to love this quick condiment!

Easiest way to peel and slice a mango

The first time I ever tried to peel and cut a mango, I made a giant squishy mess! I didn’t really know what I was getting myself into. The key is knowing the shape of a mango seed. Mangos only have one large seed in the center and it is shaped like a very large almond.

There are a few different methods and videos on the internet advertising the best way to peel and eat a mango. I will admit, the wine glass method is a cool trick! But for me, the easiest method (and the one that gets the most fruit off the seed) is simply using a sharp knife. Just follow these easy steps:

Step 1:

Hold the mango so that the seed is facing vertically (the direction I am holding the seed in the second picture above). Slice off the fruit from both sides of the seed. Now that you know the shape of the seed, continue cutting the fruit from the smaller sides of the mango as close to the seed as possible.

Step 2:

Slice the large side pieces into strips.

Step 3:

Slide the knife between the peel and the fruit. It should separate very easily. Using this method, you can see what you’re doing and can separate almost all of the fruit from the peel. (I hate wasting food!)

Step 4:

Cut the beautifully peeled slices into cubes. For this salsa, the smaller the cubes, the better. Repeat steps 2-4 for all of the remaining large pieces.

Description

It’s sweet and tangy with just the right amount of bite! No added sugar, citric acid or preservatives bogging down this homemade salsa.  Just a handful of fresh produce made with love.


Ingredients

Scale

a quarter of a large fresh mango- cubed (about 1/2 cup)

1/2 cup cherry or grape tomatoes- chopped

2 Tbsp red onion

1 Tbsp parsley or cilantro

1 Tbsp lime juice

salt to taste

honey (optional)

jalapeno (optional)


Instructions

  1. Chop the mango and tomato into very small bite size pieces.
  2. Mince the red onion.
  3. Rough chop the parsley/cilantro.
  4. Toss the above chopped ingredients with lime juice and salt to taste.  Add a small squeeze of honey for extra sweetness or finely chopped, seeded jalapeño for some spice IF DESIRED.

Notes

This salsa tastes great the moment it is made.  However, if you have the time, definitely allow it to marinate in the refrigerator for 30 minutes or more.  This allows the flavors to develop, and the salsa becomes a bit juicier. Yum!

This recipe makes a little over a cup of salsa.  It was perfect for spooning over 4 servings of salmon.  But we had no leftover salsa.  Double the recipe if feeding more than 4 or if you plan on eating with chips etc.  You’ll be glad for the extra!
