Sweet and Spiced Crock Pot Shredded Pork

This week has been a busy one- filled with work, sports, school open house and haircuts. A week like this calls for one of my family’s favorite meals! I love this dish because:

It is juicy and so flavorful with a little sweet with a little heat.

It is easy to prepare.

It practically cooks itself.

Something the whole family can customize the way they want.

There is always plenty for leftovers.

Building the Sweet and Spiced Flavor

There are two ways we layer flavor into our shredded protein.

  • A dry rub with unique spices including cumin, cinnamon and chili powder.
  • The sweet and the heat: honey, coconut aminos (optional if strictly following SCD), garlic and Tabasco sauce.

Step 1: Rub spice blend onto pork.

Step 2: Sear pork.

Step 3: Place pork and flavor packed ingredients into crock pot.

Step 4: Shred pork and serve.

Custom-ability is one of the best parts about this dish! The flavor of the meat goes well with a variety of toppings in many different ways. This is good news for leftovers- you won’t feel like you’re eating the same exact meal twice. Try them in these ways:

  • Inside grain-free or gluten-free tortillas topped with pickled or raw red onion, feta and cilantro.
  • BBQ-style topped with Dijon mustard, spicy pickles and alongside creamy coleslaw and Sauteed Green Beans.
  • Piled on top of lettuce or spinach with avocado, peppers, onions and salsa.
  • Served with Cauliflower Rice and topped with Mango Salsa.

Sweet and Spiced Crock Pot Shredded Pork

Description

Ten minutes of prep, just a few ingredients and a crock pot are all you need for this super flavorful shredded pork!  This dish is so versatile and customizable- great for leftovers and one everyone in the family will love.


Ingredients

Scale

2 lbs pork loin or tenderloin

1 tsp salt- or more to taste

1/2 tsp pepper

1 tsp cumin

1 tsp cinnamon

1 tsp chili powder

1/2 cup homemade bone broth or water

1/4 cup honey

1 Tbsp coconut aminos OR 1 extra Tbsp honey

2 Tbsp garlic- minced

1/21 Tbsp Tabasco sauce


Instructions

  1. Make the spice rub by mixing the salt, pepper, cumin, cinnamon and chili powder in a small bowl.
  2. Coat the pork loins with the spice rub.
  3. Heat 1-2 Tbps olive oil in a cast iron or stainless-steel skillet.
  4. Sear the pork for a minute or two on each side.  Place seared pork into the crock pot.
  5. Pour the bone broth or water onto the hot skillet to deglaze, scraping all those yummy bits off of the bottom of a pan.
  6. Add broth and browned bits to the crock pot.
  7. Add minced garlic, honey, coconut aminos (if using) and Tabasco sauce.
  8. Cook on high for 2-3 hours or low for 4-6 hours.  After a couple hours, I shred the pork and return to the pot to finish cooking and soaking up all that yummy flavor.

Serving Suggestions:

Make tacos and top with pickled red onion and feta cheese.

Shredded pork salad with Mango Salsa

BBQ style topped with Dijon mustard and spicy pickles alongside creamy coleslaw.

Notes

I usually use 1/2 Tbsp Tabasco sauce but feel free to kick up the heat and add up to 1 Tbsp.
