The BEST Herby Broccoli Salad

Description

A unique combination of fresh herbs and spices, dates and a tart and sweet vinaigrette create this mouthwatering healthy salad.  One taste and you’ll see why this Herby Broccoli Salad will be your new favorite fresh dish!


Ingredients

Scale

For the salad:

1 lb broccoli- florettes and tender parts of the stems chopped small

1 jalapeno- seeds and pith removed- chopped small

1/4 cup cilantro- rough chopped

1/4 cup mint- rough chopped

4 medjool dates- chopped

1/2 cup pistachios

lime wedges (optional but recommended)

For the dressing:

Juice from 1 lime

5 Tbsp olive oil

1 Tbsp apple cider vinegar

1 Tbsp honey

1/2 inch nub fresh ginger- minced

1/4 jalapeno- seeds and pith removed- minced

4 mint leaves

1/4 tsp salt


Instructions

  1. First, make the dressing by adding all ingredients to a high-speed blender or blend with an immersion blender.
  2. Chop broccoli florettes and the tender part of the stems into very small pieces.
  3. Chop jalapeno small and rough chop herbs and dates.
  4. Add all veggies, herbs and pistachios to a bowl.
  5. Toss with dressing.
  6. Serve with lime wedges.  In my opinion, the extra squeeze of lime is a must! This salad can be served immediately or make a few hours ahead.  Store any leftovers in the fridge. Enjoy!

Notes

This salad holds up well overnight.  Just give it a toss and enjoy!
