That was the exact phrase I sent to my friend after tasting this salad. I am always on the hunt for new, unique sounding salads. When I saw the ingredient list for the original version of this salad, I knew I had found my new favorite broccoli dish! I immediately went to the store to purchase the one ingredient that I didn’t already have on hand. (Of course, there had to be one…!) My instinct did not disappoint- this Herby Broccoli Salad is truly the BEST broccoli salad I’ve ever eaten! Don’t just take my word for it- my daughter literally asked for this salad as her bedtime snack.
Herby Broccoli Salad- Recreated
I cannot take credit for the creation of this delicious bowl of greens. The popular London restaurant, Dishoom, offers a Chili Broccoli Salad on their menu daily. After seeing a post for their recipe, I made a few minor changes to make the salad legal for anyone following the Specific Carbohydrate Diet, as we do. While the salad includes a little over one whole jalapeño, I titled this an Herby Broccoli Salad because it seems to me the stars of the dish are the incredible combination of herbs and fresh veggie spices:
This Herby Broccoli Salad is so fresh and healthy! Broccoli, dates, pistachios and jalapenos create an exciting and unique base for the salad. But the real highlight of this dish is the dressing. This is no traditional mayonnaise dressing. It is a tart and sweet olive oil and lime dressing spiked with ginger, jalapenos, mint and honey. I could drink the dressing alone it is THAT good!
I just packed the rest of this salad in both of my kids’ lunchboxes…at their request! (It actually went something like this: “Mom, I don’t care what you pack but there better be broccoli salad in there.” Not exaggerating!) If you enjoy vinegar based, sweet salads with an herby, peppery kick, give this Sweet and Spicy Peanut Cabbage Salad a try. It is our new favorite version of coleslaw!
A unique combination of fresh herbs and spices, dates and a tart and sweet vinaigrette create this mouthwatering healthy salad. One taste and you’ll see why this Herby Broccoli Salad will be your new favorite fresh dish!
For the salad:
1 lb broccoli- florettes and tender parts of the stems chopped small
1 jalapeno- seeds and pith removed- chopped small
1/4 cup cilantro- rough chopped
1/4 cup mint- rough chopped
4 medjool dates- chopped
1/2 cup pistachios
lime wedges (optional but recommended)
For the dressing:
Juice from 1 lime
5 Tbsp olive oil
1 Tbsp apple cider vinegar
1 Tbsp honey
1/2 inch nub fresh ginger- minced
1/4 jalapeno- seeds and pith removed- minced
4 mint leaves
1/4 tsp salt
First, make the dressing by adding all ingredients to a high-speed blender or blend with an immersion blender.
Chop broccoli florettes and the tender part of the stems into very small pieces.
Chop jalapeno small and rough chop herbs and dates.
Add all veggies, herbs and pistachios to a bowl.
Toss with dressing.
Serve with lime wedges. In my opinion, the extra squeeze of lime is a must! This salad can be served immediately or make a few hours ahead. Store any leftovers in the fridge. Enjoy!
This salad holds up well overnight. Just give it a toss and enjoy!
