Chicken Avocado Burgers

Chicken Avocado Burgers

These Chicken Avocado Burgers have been a friend and family favorite for years! They are on our regular dinner rotation. When I had my meal prep business, these were a HOT item! I can remember some weeks literally making and freezing hundreds of burgers. So, what’s all of the fuss about?

Why we love Chicken Avocado Burgers

It is quite possible that you have the handful of items needed to make these burgers at home right now. The ingredients are simple, but the combination is just right to create a juicy, super flavorful, unique burger.

  • Ground chicken– We prefer a grind that is not 100% lean breast meat. A little fat in the ground chicken will keep it moist and juicy.
  • Garlic– One minced clove is all you need to provide the flavor.
  • Jalapeno, crushed red pepper or red pepper flakes– The spice is minimal but provides a yummy twist.
  • Avocado– The star of these burgers is cut into cubes and mixed right into the ground chicken. It gives the burgers a creamy bite and provides that heart healthy fat that our bodies need.

That’s it! No flours, no egg, no milk; just SCD, grain-free, paleo friendly protein, spices and good fats.

Great for meal prep

Chicken Avocado Burgers come together in a snap, perfect for a weekday dinner. But believe it or not, burger night can be made even easier. Double or triple this recipe and vacuum seal the burgers RAW. Now you have burgers that will last months in the freezer. Just pop them right onto a skillet from the freezer and boom! dinner in minutes. Check out THIS ARTICLE for the specifics on vacuum sealing.

Best Chicken Avocado Burger Toppings

There is really no wrong way to enjoy these yummy juicy patties. In our house, everyone tops their burgers a little differently. We all start with an SCD friendly, crispy lettuce ‘bun’. A few of our favorite topping combos include:

  • Vinegar and Spice: Dijon mustard and Wickles (side note: Wickles Wicked Pickle Chips are a sweet and spicy pickle. Not SCD legal because they do contain sugar. But if you are not following the SCD diet, these pickles are addictively good and a must try if you like spice!)
  • The Southern: Cheddar cheese and BBQ sauce
  • The Mediterranean: Sauteed onions and feta cheese

No matter how you eat your burger, these Chicken Avocado Burgers will no doubt be a fan favorite in your house too!

Description

These mouthwatering, fan favorite burgers are a regular on the dinner rotation.  Heart healthy avocado, garlic and ground chicken combine to create a perfectly unique and delicious flavor.

Ingredients

Scale

1 lb ground chicken (we prefer a grind with a little fat, not 100% chicken breast)

1 garlic clove

1 small jalapeno OR 1/8 tsp cayenne pepper (not both)

1/2 tsp salt

ground black pepper to taste

1 small or 3/4 large avocado- RIPE but still a little FIRM works best

Instructions

  1. Mince garlic.
  2. Remove seeds and pith from the jalapeno (if using) and mince.
  3. Add garlic, jalapeno (if using) OR cayenne pepper, salt and pepper to a bowl.
  4. Combine spices with ground chicken.
  5. Cut the avocado into small cubes and GENTLY mix the cubes into the chicken and spices.
  6. Form 4 patties.  *if the mixture is too sticky, wet your hands and then form into patties.
  7. Heat a cast iron skillet to medium-high heat.
  8. Generously coat the skillet with butter or oil and cook burgers 6 minutes per side.

Notes

A ripe but firm avocado works best so the cubes don’t get all squished.

If the chicken is super lean (100% breast meat), try adding a little olive oil to the mixture.  It will help the burgers from drying out.

If cooking burgers from frozen, there is no need to thaw first.  Just pop onto a heated skillet.  It may take a little longer that 6 minutes per side.
