Paleo Walnut Date Energy Balls

This week I whipped up a batch of our favorite easy, peasy Paleo Walnut Date Energy Balls. Afterwards, while savoring my delicious healthy treat, I was browsing my Taste of Wellness cookbook. I happened upon this really cool section titled “The Hidden Miracles in Our Food”. AND wouldn’t you know it, one of these “hidden miracle foods” happened to be walnuts. What luck! Take a look at what these little brain-resembling nuts do:

After doing a little research, I learned HERE that there are at least 100 neurotransmitters in our brain, meaning walnuts help develop over 30% of them. Neurotransmitters are the chemical “messengers” that deliver signals to your nerves. Nerves and neurotransmitters help control everything in our bodies: breathing, heartbeat, blood pressure, senses, thoughts, learning, sleep, muscle movement and so much more!


As it turns out, not only did God create superfoods to fuel our bodies, He made a few of these foods look just like the body parts they support. I loved all of this information, and it makes me smile to know that healthy foods and our bodies have been so thoughtfully and perfectly designed!


Six Simple Ingredients

There are dozens of energy ball variations, but sometimes simple is best. All you need for these yummy Paleo Date Walnut Energy Balls is 6 simple ingredients, a food processor and 15 minutes.

  • Dates
  • Walnuts
  • Unsweetened shredded coconut
  • Vanilla
  • Cinnamon
  • Salt

Simple, healthy treats like these are a staple in our house. We follow the Specific Carbohydrate Diet to manage our daughter Crohn’s Disease. The only types of sweeteners allowed on this diet are honey and natural sugars from fruit and fresh fruit juice. I make a double batch of these energy balls and keep them in the fridge for quick snacks.

Paleo Walnut Date Energy Balls

Description

Six ingredients, a food processor and 15 minutes is all you need for these incredibly simple, delicious snacks!  These grain-free treats feature a hint of cinnamon and the brain boosting power of walnuts.  I like to double the recipe and keep in the fridge for a quick sweet bite.


Ingredients

Scale

1 cup walnuts

1 cup pitted Medjool dates

1/41/2 cup shredded coconut

1/2 tsp vanilla

1/4 tsp cinnamon

1/4 tsp salt


Instructions

1. Place all ingredients in a food processor and pulse until you reach your desired consistency. 

2. Roll into 1 inch balls.

3. Store in an airtight container in the refrigerator.  These can be frozen too!

Notes

If desired, roll the finished balls in additional shredded coconut.
