Happy New Year! I’m hoping everyone’s year has gotten off to a great start, including making those resolutions. One of my personal pursuits in 2024 is flexibility! (No, not yoga-style flexibility, though some of that would be nice too!) I’m talking about letting go of perfectionism; rolling with the punches; adaptability. Being a “first-born perfectionist”, giving up control and accepting ‘less than perfect’ results is difficult for me. But I am excited for that picture-perfect weight to be lifted off of my shoulders. I was only 2 hours in to 2024 before my first test in flexibility hit.
I was all excited to make my family a fun banana pancake breakfast, complete with all of the toppings. I had perfect brown, spotty bananas. I had all the toppings: blueberries, pomegranate seeds, local honey, homemade freshly ground almond butter and peanut butter, farmers market organic cacao nibs…you name it! I had just enough almond milk to make a double batch of a pancake recipe I had not tried before. Thank you to another amazing SCD follower, Wholesomely Hannah, for the inspiration! The batter had a lovely consistency, and I was excited to make pancakes with both almond and coconut flour and NO added sugar (or honey if following SCD). Check out these beauties!
…And that photo is where the beaty ends! Lol! Those poor pancakes were such a bugger to flip. They would not firm up enough for me to get my spatula underneath and the result was a batter-y mess. I am no newbie when it comes to SCD baking. I know that grain-free pancakes are trickier to flip than the traditional variety. Never the quitter, I tried a second time…with slightly more success. However, it took so long for the pancakes to cook that I was getting hungry and impatient! The good news is these pancakes tasted AMAZING and I WOULD NOT waste this delicious batter!! It was time for Plan B. And Banana Pancake Mini Muffins were born!
The Taste of Banana Pancakes in a Mini Muffin
These bites of deliciousness have a light and tender crumb. They are perfectly sweet enough to enjoy on their own, even with ZERO added sugar/honey. And if you happen to eat the whole batch in one sitting, no problem! This grain-free breakfast is made with nothing but wholesome, healthy ingredients:
Very ripe banans
Almond flour
Coconut flour
Almond milk
Eggs
Vanilla
Cinnamon
Salt
Baking Soda
Remember all of those fun toppings? Well, they didn’t go to waste. We had fun make Banana Pancake Mini Muffin sandwiches!! If you want the delicious taste of banana pancakes in a fraction of the time, this is your recipe! After my first New Year’s lesson in adaptability, I may never make pancakes the “normal” way again! Yes, you read it right! These adorable mini muffins taste just like banana pancakes! This SCD legal breakfast treat is grain-free and sweetened ONLY with very ripe bananas. With simple, wholesome ingredients and no laborious pancake flipping, these mini muffins will be your new banana pancake go-to!
Ingredients

2 large very ripe bananas (lots of brown spots!)
2 eggs
1/4 cup plus 2 Tbsp almond flour
4 Tbsp coconut flour
1/2 unsweetened almond milk
1 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
1/4 tsp salt
Instructions
Preheat oven to 350 degrees.
Prepare a mini muffin tin with silicone or parchment paper liners.
Mash bananas by hand or, if you prefer a very smooth batter, use a food processor.
Add eggs, almond milk and vanilla and blend/mix until smooth.
Add all remaining ingredients and blend until well incorporated.
Allow the batter to sit for 2-3 minutes for the coconut flour to absorb the liquid.
Fill the muffin tins 3/4 of the way full. The batter will rise.
Bake at 350 degrees for 15-18 minutes or until the muffins are slightly firm to the touch. They will firm up more as they cool.
Enjoy as is, with butter and honey or as peanut butter/banana mini sandwiches!
Notes
These keep best in the fridge. Store in an airtight container for up to 5 days…if they last that long!
