For the past few months, I have been trying to cut back on our almond flour intake. I love grain-free baking, but we were going through the almond flour like crazy. And while almonds are packed with benefits and almond flour is a great low carb, grain-free alternative to wheat flour, it has its drawbacks too. Almond flour breads, cookies and other baked goods are SO DELICIOUS, it’s easy to over-consume the almonds! As one of my *over-used* saying goes:

If you have done any grain-free bread baking, you know that the texture is much different than a traditional wheat bread. Grain-free breads are dense. Sweet or savory, the texture resembles a traditional quick bread made with wheat. (Think the consistency of pumpkin or banana bread.) Grain free breads also tend to fall apart easily. You cannot pile your sandwiches too full. You need to be a little delicate with them.

The Secret to a Pliable Grain-free Bread
Lentil Flour is the magical ingredient that makes this bread pliable and not crumbly. It may be a bit difficult to find IN some stores. BUT never fear! You can find it easily on Amazon or other websites. I actually made my own lentil flour in less than 1 minute. A bag of split red lentils and a high-speed blender is all you need. My split lentils transformed into lentil flour in seconds! Below are a few other orderable options.

The protein and fiber combo create a hearty and filling bread. Just toast this bread for a couple minutes and it is perfect for a lunch sandwich, an open-faced egg and avocado breakfast dish or my favorite, warmed and dipped in a seasoned olive oil! What a treat with dinner or even a glass of wine! 🙂

This hearty and delicious grain-free focaccia bread is such an amazing treat! Perfect for sandwiches or toasted and dipped in olive oil, a savory low-carb bread has never been so versatile!
Cover the bottom of an 8×11 baking dish with parchment paper. Or generously oil the bottom and sides of the dish.
Place all bread ingredients except cheddar and green onions/scallions in a food processor. Blend until the mixtures is smooth and all ingredients are incorporated.
Add scallions and cheddar and pulse until combined.
Spread the dough in the prepared baking dish. Sprinkle topping ingredients over the dough.
Bake at 375 for 25-30 minutes or until the top is nicely browned and the bread is firm to the touch.
Store in the fridge in an airtight container for up to a week. This bread can be frozen as well.
Notes
This bread will likely stick to the bottom of the pan even when oiled. It does come out when using a spatula to gently unstick it. To avoid this, use parchment paper on the bottom.
We prefer this bread toasted for a few minutes instead of cold out of the fridge. It really is so yummy!
