In recent months, our Specific Carbohydrate Diet following daughter has begun to slowly add a few new foods back into her diet. One food she was VERY interested in adding was cocoa powder. After over 5 years of not eating chocolate AT ALL (can you imagine?!), she had completely forgotten what it tasted like. But she knew she wanted to eat it! I am happy to report that her body seems to be tolerating cocoa powder just fine. As it is technically an “illegal” food on the SCD diet, we only eat homemade chocolate treats in moderation. (See all SCD legal/illegal foods HERE.) But boy is moderation hard when it comes to this Dairy Free Chocolate Date Ice Cream! I cannot stop making it! And once you try this creamy, perfectly satisfying dessert, you won’t want to stop making it either!

This Chocolate Ice Cream rivals any traditional chocolate ice cream you will find in the store. I would be willing to bet you could not even taste a difference. Actually, in my opinion, this chocolatey, creamy treat is actually BETTER than what you can find in a store! But there are differences….healthy, feel good, never-switching-back-to-traditional-ice-cream differences.


The Special Belly Dairy Free Chocolate Date Ice Cream

Store-Bought Dairy Free “Healthy” Chocolate Ice Cream

Dairy Free Chocolate Date Ice Cream

Description

Warning:  This creamy, chocolatey dessert is so satisfying and addictive, you won’t want to stop eating it! This Dairy Free Chocolate Date Ice Cream rivals any traditional chocolate ice cream you will find in the store.  Critics agree that it actually tastes better and since there is NO SUGAR, only dates to sweeten it, it is much better for you too!  


Ingredients

Scale

1 cup unsweetened almond milk- no added ingredients (try brands like Elmhurst or Califia Farms)

1/2 cup unsweetened coconut milk- no added ingredients (try brands like Trader Joe’s or Thai Kitchen 2 Simple Ingredients)

1 Tbsp unsweetened cashew or sunflower butter

4 large medjool dates (pitted)

3 Tbsp cocoa powder

1/2 tsp vanilla

1/8 tsp salt

1/8 tsp cinnamon


Instructions

1. Blend all ingredients in a high speed blender until completely smooth.

2. Freeze for 6-8 hours.  If using a Ninja Creami, freeze in the appropriate pint size container for at least 6-8 hours (or overnight).

3. Blend in the Ninja Creami for ultimate smooth creaminess. (You may need to use the re-spin option if it is not smooth after the first blend.)  If not using a Ninja Creami, when you are ready to eat, just set the ice cream on the counter for a few minutes and allow it to thaw a little.

Notes

Any type of non-dairy milk will work with this recipe.  I have had success with all almond milk, all coconut milk and the combination that you see in the recipe.  I imagine cashew milk or macadamia nut milk would also be delicious options!
