Lemon Bar Energy Balls

There is something so delicious about lemon bars. Those lovely little squares, so light and tangy. Imagine that same sweet, refreshing taste, but with zero added sugar and ten times easier to make! Enter these Lemon Bar Energy Balls! They are made with a few simple but nutrient dense ingredients. Let’s take a look.

  • Lemon zest and juice– There is more than one whole lemon zested into these little snacks and believe it or not, lemon zest packs lots of goodness. Check out all of the benefits of lemons here on webmd.
  • Cashews– High in protein (5 grams in only 1 ounce!), fiber and a variety of nutrients, cashews are a super beneficial, plant-based addition to your diet.
  • Coconut flakes– Dried coconut is high in fiber and good fats. These balls are coated with coconut which gives them a fun crunchy texture on the outside.
  • Medjool dates– This amazing fresh fruit (Medjool dates are fresh, not dried!) packs a natural sweetness and will boost energy. Studies show dates can stimulate the immune system, reduce inflammation and contain many other beneficial nutrients.

Lemon Bar Energy Balls

Description

These yummy energy balls taste like a lemon bar but without all the sugar.  Keep these grain-free, sugar-free snacks on hand for a quick snack that’s actually good for you!


Ingredients

Scale

1 cup Medjool dates

1 cup raw cashews

1/4 cup unsweetened coconut flakes (plus extra for rolling)

1 tsp vanilla

Zest of 1 1/4 lemons (to taste)

Juice of 1/41/2 lemon


Instructions

  1. Place all ingredients into a food processor and process until everything is incorporated and the texture is to your liking.  (Taste the mixture and add extra zest or juice if you like extra lemon taste.)
  2. Roll the dough into 20 small balls.
  3. Roll the balls into the extra coconut flakes.  (I prefer to chop the flakes into small pieces, or even use a spice grinder to make it more of a powder if I have extra time)
  4. Store in an airtight container in the refrigerator or freezer.
