But take that same squash and turn it into “fries” and voila! they are gone before I can blink! This is the magic Roasted Squash Home Fry recipe that turns my whole family into squash monsters.

Who doesn’t love a “fry”? These Roasted Squash Home Fries are no exception! Slightly charred but tender, and lightly seasoned to sweet and savory perfection. This unsuspecting side dish will become the star of the dinner plate!
Ingredients
Scale
1 small butternut squash or 1 medium acorn squash
2 Tbsp olive oil
1/2 tsp salt
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/4 tsp pepper
Instructions
1. Heat oven to 400 degrees.
2. Peel and deseed you squash of choice.
3. Cut squash into 1/2 cubes.
4. Mix olive oil and spices in a large bowl.
5. Toss cubed squash in spice mixture.
6. Spread squash evenly on a baking sheet.
7. Roast for 20-25 minutes until the squash is tender and the outside is dark golden brown.
8. Taste and add more salt/pepper if desired.
Notes
If there are any leftovers, re-heat in a 350 degree oven OR enjoy them cold straight from the fridge!
