Previously, I posted about how creating a copycat “Chick-Faux-A” lunch for my daughter. Her class was celebrating the end of the year with Chick-Fil-A and I didn’t want her to feel left out. After this post I had requests for the nugget recipe…so here it is!
Homemade Chicken Nuggets- Fun for the whole family
Making healthy, Almond Flour Crusted Chicken Nuggets at home is a fun way to get the kiddos involved. We set up an assembly line and everyone gets their hands a little messy. The process is easy and in no time, your family will be enjoying a copycat drive-thru dinner! No unwanted ingredients, no frying. Just a clean, healthy, SCD legal and kid approved meal.
Step 1: Cut up chicken breasts in nugget sized pieces.
Step 2: Submerge in beaten eggs.
Step 3: Toss in seasoned almond flour.
Step 4: Place on a baking pan and bake for 12-15 minutes.
How to Serve Almond Flour Crusted Chicken Nuggets
In the post above, I created a whole “Chick-Fil-A style” meal complete with sweet potato fries and lemonade made with just honey, lemons and water. (Check out the article from above if you need some inspiration on how to make your kiddo feel included if they too are following a modified diet.)
When we’re at home we like to serve our nuggets family style, complete with SCD Legal Ketchup and homemade honey mustard. I hope you enjoy this grain-free treat as much as our family does!
Create a better than drive-thru meal with these almond flour coated nuggets. No unwanted ingredients, no frying- just healthy, delicious and grain-free!
Ingredients
Scale
1 1/2 lbs chicken breast- cubed
1 large egg- beaten well
1 1/2 cups almond flour
1 1/2 tsp onion powder
1 1/2 tsp garlic powder
3/4 tsp paprika
1/2 tsp pepper
3/4 tsp salt
Instructions
Preheat oven to 425 degrees.
Cut up chicken breast into nugget sized pieces. Shake a little salt and pepper directly onto the chicken.
Get out 2 separate bowls. In one bowl, beat the egg well. In the second bowl, stir together the almond flour and spices.
Dip each nugget into the egg wash, then coat with the almond flour mixture.
There are 3 ways to bake these nuggets:
Place nuggets onto the parchment paper
Place nuggets onto a cooling rack over the baking sheet. (see pictures in post)
Place in the air fry basket of a toaster oven (if available).
Bake for 12-15 minutes until the outside looks golden and crispy. If baking directly on the parchment paper, flip nuggets halfway through.
Serve immediately with sauces of choice!
Notes
If using the cooling rack or air fryer method, there is no need to flip the nuggets.
Leftovers can be refrigerated. Just plan to reheat in an oven to re-crisp the outside.
Hi Karilee! I would try full fat coconut milk or almond milk. Both will help the almond flour sick to the chicken. And then I would definitely use parchment paper so the breading doesn’t stick to any surface. Let us know how they turn out! ❤️
Any ideas what to sub for the egg? My daughter is not tolerant of any eggs, but she would love nuggets!
