Long before the “Starbucks Egg Cup Craze”, avid Paleo, Grain-Free and SCD followers have been enjoying Egg Cups; or as I like to call them, Crustless Mini Quiches. For someone who eats eggs daily, having these mini quiches in the fridge is such a blessing. No messy egg cracking, no rush to clean up the kitchen in the morning. Just pop these babies in the microwave (or toaster oven if you have a little more time) and voila! – easy, fast, protein packed breakfast! The only problem is everyone in the family loves them so much, they are gone before I can blink!!
The Keys to a delicious SCD Legal Starbucks Look-Alike
Key 1: The Meat
If you are adding meat to your Crustless Mini Quiches, make sure it is either:
free of any illegal ingredients (i.e. sugars, preservatives, starches etc.) Check the labels of most store-bought meats- you might be surprised at what you find!

Here are just a few SCD legal store-bought meats that we have tried and that are easy to find.
Key 2: The Cheese
Starbucks uses cottage cheese to achieve their moist creamy texture. However, cottage cheese is not allowed on the SCD diet. Don’t worry, there is a solution- Farmer Cheese also known as Dry Curd Cottage Cheese (DCCC). This delicious substitute has almost no lactose and a soft texture that resembles a slightly dryer ricotta. It works perfectly in recipes that call for cottage cheese or ricotta, especially if you mix a little SCD legal yogurt with it to add a little moisture.
Key #3- Silicone Muffin Liners
For these crustless mini quiches or any grain-free baking, silicone muffin liners are a must. The quiches or muffins or whatever you are baking just slide right out. Nothing sticks to the muffin tin and clean up is a breeze! I got THESE from amazon and have used them over and over for years.
Customize your Crustless Mini Quiche
There are endless ways to customize your quiche. This recipe makes a great simple base quiche. And sometimes simple is best. The recipe as written is SO delicious! But feel free to make it your own- use different cheeses or add veggies. A couple of our favorite combos are:

NOTE: **This is a big recipe that makes 16 mini quiches. Our family really enjoys these!**
12 eggs (I used 8 whole eggs and 4 egg whites. Feel free to switch it to your liking)
Prepare a muffin tin with silicone liners, parchment paper liners or grease very well. (I always use silicone liners and these cups pop right out.)
Chop onion very small.
Heat olive oil in a skillet and sauté onion until soft and golden.
Add eggs, Farmer Cheese, salt and pepper to a food processor. Process until smooth.
Divide cooked ground sausage, shredded Swiss cheese and sauteed onion among 16 lined muffin cups. (I do this to make sure every mini quiche has an equal amount of deliciousness!)
Fill each muffin tin with the egg and farmer cheese mixture.
Top with a couple pinches of Swiss cheese if desired.
Bake for 15-20 minutes until the mini quiches are set, golden and firm to the touch.
Store in an airtight container in the fridge for 3-4 days.
