Homemade Savory Turkey Breakfast Sausage

Homemade Savory Turkey Breakfast Sausage

When following the Specific Carbohydrate Diet, label reading becomes second nature. I buy 80% of our food from the outer aisles of the grocery store. Those inner aisles are tricky! The first thing I do when I pick up a box or container is flip it over and read the ingredients. I used to feel pretty safe in the outer aisles until I realized that “fresh” meat is notorious for added ingredients. Check it out for yourself the next time you go shopping. Oftentimes even “organic” or “all natural” meats contain rosemary extract (for freshness) at a minimum.

My daughter loves eggs and “sausage” for breakfast. It is her go-to meal. So, how do you find sausage if you are following a strict SCD lifestyle? The options are limited, though there are a few SCD legal sausages available. (I have a page under construction as we speak devoted to SCD legal products.) Fortunately, this Homemade Savory Turkey Breakfast Sausage is so easy and flavorful! In just minutes, you will have clean, yummy sausage ready to add to Starbucks Look-Alike Mini Quiches, or a simple egg and sauage breakfast scramble.

Locally Sourced and homemade is best

When it comes to sausage, or any “processed meat”, the safest bet is always homemade. You are in control of the ingredients and can leave out all of the sugar and additives. And bonus points to you if you can buy your meat at a clean local farm! In Central Florida, we are fortunate to have Lake Meadows Naturals where I can buy fresh, locally grown and sourced meat, eggs, produce and more!!

How to serve Homemade Savory Turkey Breakfast Sausage

Since we eat eggs almost every day, I like to try and mix things up from time to time. (Even though the ingredients are pretty similar!) This turkey breakfast sausage makes a great addition to:

  • Yield: 8 Patties or 1 lb sausage crumbles 1x

You don’t need to worry about added sugar or preservatives with this clean sausage!  It is a delicious and savory addition to your breakfast plate or any of your favorite egg dishes!

1 lb ground turkey

1/2 Tbsp honey

3/4 tsp salt

3/4 tsp black pepper

3/4 tsp ground sage

3/4 tsp ground thyme

1/4 tsp dried marjoram

1/4 tsp fennel seeds (I grind mine into a powder)

pinch red pepper flakes (or more depending on your desired level of spiciness)

  1. Mix all of the spices together into a small bowl.
  2. Add spices to raw ground turkey.
  3. Heat a skillet to medium/high heat.  Coat the bottom with butter or coconut/olive/avocado oil.
  4. Form spiced meat into patties if desired.  Cook for 3-4 minutes until a lovely brown crust forms.
  5. Flip patties and repeat.
  6. (I often omit the patty forming step and just cook the ground meat.  It is useful in quiches, egg scrambles and more!)
  7. Serve warm or refrigerate or freeze for later use.
