I know what you’re thinking. It’s January…it’s COLD! Why are we talking about ice cream?! I’ll tell you why: for Christmas my daughter received the Ninja Creami. This fun, new-ish kitchen appliance can take pretty much any frozen mixture and turn it into ice cream. We make ice cream often, but without an ice cream maker, it freezes into a rock-hard block. Our supposed-to-be creamy desserts would need to sit out for several minutes to soften (and who has the patience for that?!). Often, we would use the time-saver method: cut out frozen portions with a knife and enjoy ice cream cubes!!

But because of Santa’s generosity, our rock-hard dessert woes are now a thing of the past! We can’t stop making batch after batch of ice cream. There are so many flavor combinations, and I will be sharing recipes in weeks to come. But hands down, one of our family favorites is this SCD Legal Dairy-Free Honey Vanilla Ice Cream!

  • Full fat canned coconut milk
  • Cashews
  • Coconut oil
  • Honey
  • Vanilla

An ice cream maker creates a perfectly scoopable consistency. But even before we owned the Ninja Creami, this Honey Vanilla Ice Cream was on regular rotation! It is so creamy, lightly sweetened and truly irresistible! This addictive dessert won’t last long in your freezer! 


Why dairy-free?

Our daughter was diagnosed with Crohn’s Disease when she was 2. For the past 6 years, we have managed her disease with food alone by following the Specific Carbohydrate Diet. Of the many foods that are restricted on the diet, regular cream and sugar are 2 of the big ones. (Click HERE to see the full list of allowable foods). That means no traditional ice cream. Dairy and sugar are both highly inflammatory and thus, the need for alternatives. This diet is anti-inflammatory to the extreme…in the best way! Plant based milks, honey and dozens of other substitutes for traditional foods have made our SCD lifestyle not only tolerable, but truly a blessing! These foods, along with brilliant recipe developers have healed our daughter and transformed our lives! For this healing recipe, I thank the thehealthierbite.com for her delicious inspiration. 

We enjoy this ice cream plain, straight out of the bowl, or topped with berries and/or bits of crunchy Grain-Free SCD Legal Granola. It would be perfect between 2 of these Crispy Honey Tahini Cookies or alongside this Grain-Free Apple Crumb Cake. Any way you eat it, this Dairy-Free Honey Vanilla Ice Cream might be your new freezer staple!

Dairy-Free Honey Vanilla Ice Cream

Description

It’s creamy, satisfying and perfectly sweetened- a guilt-free after dinner indulgence!  This SCD legal honey vanilla ice cream is simply delicious and free of any refined sugar, “natural flavors”, gums or dairy.  Enjoy to your good health!


Ingredients

Scale

1 can full fat coconut milk (13 oz)- nothing added (no gums or emulsifiers)

1 cup raw cashews

2 Tbsp coconut oil

1/4 cup honey

2 Tbsp vanilla


Instructions

  1. Quick soak the cashews following these directions: Boil enough water to cover the cashews.  Once boiling, remove the pan from the heat and pour in the cashews.  Cover and allow the cashews to soak for 15 minutes.
  2. After soaking, drain and rinse the cashews.
  3. Add soaked cashews and all remaining ingredients to a high-speed blender.
  4. Blend for at least 1 minute until you achieve a very smooth consistency with no grit remaining.
  5. Pour the ice cream into a container, cover and freeze for at least 6 hours or over night.
  6. Enjoy!
